It began in 1981 with a single restaurant and an old-fashioned idea: serve pure-vegetarian South Indian food the way it was meant to be, with no shortcuts and no compromise. Four decades on, the sambar still simmers from scratch, the coffee decoction still drips slow, and every dosa is still griddled to order — from Chennai to Chantilly.
